Easter is my favorite holiday, hands down. I love both the religious and secular sides of it. Let me tell you about my Easter this year.
First, my Dad went into the hospital for surgery on Friday. I spent a few days before cooking up a STORM so he would have easy meals to prepare when he got home. He lives alone, and has since my mom died about 20 years ago. I headed down to Kalamazoo with my stuffed shells, lasagne, Italian Wedding Soup, chicken parmesan, beef stew, and Cincinnati Chili to stock up my Dad’s freezer. I met up with my sister, and we headed to the hospital where we found my Dad a little goofy from the painkillers but otherwise doing great.
Down the hall was my Grandma (?!), who had been admitted the same day. The next few days were spent bopping between my Dad and Grandma’s room. Much of my family lives in Kalamazoo, so we pretty much took over a wing of Bronson Hospital’s third floor. We joked that the nursing staff (who was wonderful) would forge discharge papers just to get rid of all of us.
I got home last night, and spent the day catching up. My poor, old epileptic dog had a seizure just to top off the week. I had big plans to do a special post about all of the Easter Egg hunts in town. I am guessing anything that was planned for outdoors must have been cancelled. I was going to share all of my freezer recipes for Menu Plan Monday, but I’m just going to ‘jump in where I am’ Flylady style and bring Tasty Tuesday to you tomorrow. Easter remains my favorite holiday, this was a crazy week but I wouldn’t trade it for the world. I have the best family (immediate and extended) ever. We are going to celebrate Easter in a few weeks when everyone is better, and it is warm. All of the candy and decorations will be about 75% off by then so as long as we don’t look at the calendar, it will be a great time. I hope everyone else had a calm, peaceful, and normal Easter.

) Praying for your Dad and Grandma!
Thanks for stopping by my blog! Thanks for the heads up on Goodwill! I am not that far from the 52/Division Goodwill, so I might need to stop in there sometime. As for their warehouse, I am not sure exactly where on 36th st that is going to have to look it up though!

Welcome back, Big Binder. I so need to have surgery. My family would eat like royalty! Also, so sad about your epileptic dog. It sounds like you need a little retreat, and by retreat, I mean wine.

[...] made a lasagne last week and put it in the freezer. It was a day of cooking frenzy, and I can’t remember what all went into it, but I think that sausage was involved. [...]
