We had an AWESOME day! First, we participated in the Mayor’s 4th Annual Grand River Clean Up. The West Michigan Environmental Action Council organizes the event along with the Grand Rapids Young Professionals, and hooks volunteers UP with snacks, t-shirts, and lunch. Everyone gets bags and gloves, and an area to clean up. I was really humbled by the people who stopped by to say “thanks”. It was a great time, well organized, and fun.
It was a beautiful day, and we were ‘stationed’ down by the fish ladder so the kids really had a great time. A.P. had his picture taken with Mayor Hartwell AND got a Yesterdog for lunch, so his day was made early on.
From there, we went out to an orchard to pick a few apples. We weren’t there long though; none of us were feelin’ it as it was about 80 degrees out by that point. We’ll try again next week, except it will probably be snowing.
Then we went to Octoberfest at our church, and by the time we got home we were all too pooped to make anything. Tomorrow, though, we will make applesauce using a very kid friendly recipe. I would like to thank A.P.’s preschool for this one
- 12 cups pared, cored, thinly sliced cooking apples
- 1/2 cup sugar
- 1/2 tsp cinnamon
- 1 cup water
- 1 tbsp. lemon juice
- Place apples in slow cooker.
- Combine sugar and cinnamon. Mix with apples.
- Stir in water and lemon juice.
- Cover. Cook on high 2 1/2-3 1/2 hours.
- Serve hot or cold.

I just got into using a slow cooker recently, and this would be a great recipe to do with Clare…especially since yesterday she asked to make applesauce with me!
